REC Tomato cheddar soup - made this tonight - a different take on tomato -parmesan soup...

1 onion (you should really use 2 but my s-i-l reacts to more than one.

2 stalks of celery

lots of garlic (I guess I used about 7 cloves.)

olive oil

1/2 large can of tomato paste

6 tomatoes chopped coarsely

1 qt. of water

1& 1/2 qt vegetable soup

cilantro chopped

salt/pepper

almost 2 cups of cheddar cheese -grated

1 c. sour cream

corn chips.

Saute the onion,celery,garlic in the olive oil

in a covered pot for about 5 minutes.

Add soup,water and tomato paste and bring to boil. Let simmer, covered a few minutes.

Add tomatoes, cilantro, salt and pepper, bring to boil cook about 30 minutes.

Add cheddar, let melt.

Use a hand blender to blend soup to liquid,

add soup to sour cream until warm, then add to soup.

Crumble corn chips in bowl or serve with so they can be added as wanted (I did the second.)

It was a very nice soup and I am sorry that

none is left for tomorrow!!
