Rec. Zucchini Pancakes & Marinara from Cuisine at Home Weeknight Menu. These look good.

Zucchini Pancakes

Makes 8 pancakes

total time: 30 minutes

Combine:

2 med. zucchini, grated (5 c)

2 tsp kosher salt

stir together:

1/2 c all purpose flour

1/3 c grated parmesan cheese

1 egg

1/4 c yellow onions, grated

2 tbsp chopped fresh basil

1/2 tsp garlic, minced

1/2 tsp baking powder

1/2 tsp kosher salt

1/4 tsp red pepper flakes

olive oil

Combine zucchini and salt for 5 minutes, then rinse in cold water and squeeze dry in a kitchen towel or spin in a salad spinner.

Stir together zucchini and remaining ingredients (except oil). Heat 2 tbsp oil in a nonstick skillet over med-hi. Drop zucchini mixture by 1/4 c measures, flatten, and fry in batches, about 2 minutes per side. Serve with Marinara Sauce.

Simple Marinara

Makes 2-1/2 c

total time: 30 minutes

Saute in 1/4 c olive oil:

1/2 c onions, diced

2 tbsp garlic, minced

add:

4 c tomatoes, seeded and diced

1 tbsp sugar

1 tsp kosher salt

1/2 tsp red pepper flakes

off heat, stir in:

1 tbsp chopped fresh basil

Saute onions in a large saute pan over med high heat for 2 mins. Add garlic and saute for one more minute.

Add tomatoes, sugar, salt and pepper flakes, bring to a boil. Reduce heat and simmer 10 minutes, stirring frequently.

Off heat, stir in basil.

 
Seems Cuisine at Home has popped up...last night I made To-Die-For recipe from it...

Mediterranean Port Chops with orzo side. I don't have the recipe with me here at work, but I'll try to remember to bring it. It was so incredibably delicious made just as written. Bursts of different flavors with each bite...salty (green olives), pickley (capers), sweet (golden raisins) and bright (lemon zest). It's a keeper.
