Here is my recipe for Rum Chocolate covered Cherry Truffles. These are the best Let me know how you like them

I hope everyone enjoys this. These are really easy to make, takes about 20 minutes and makes about 25

Kirsch Rum Chocolate Cherries Truffles

1 egg white

4 oz dark chocolate, grated

½ cup ground almonds

1 TABLESPOON Kirsch rum

2 TABLESPOONS icing sugar (powdered sugar)

25 glace cherries (maraschino cherries)

¼ cup coca

¼ cup powdered chocolate such as Nestlé’s Quick

¼ cup chocolate sprinkles

PREPARATIONS:

Step 1: LIGHLY BEAT egg white

Step 2: Finely grate chocolate over sheets of parchment paper

Step 3: In a large bowl, or an electric mixer and combine-grated chocolate, ground almonds, kirsch rum, and powdered sugar.

Step 4: Slowly stir in enough egg white to bind the mixture.

Step 5: Refrigerate 20 minutes.

Step 6: Flatten 2 level teaspoons of mixture in the palm of your hand; work gently to enclose a maraschino cherry, smooth to a round ball.

Step 7: Sift and combine cocoa, powdered drinking chocolate and chocolate sprinkles. Gently mix.

Step 8: Roll completed balls in sifted combined cocoa, powdered drinking chocolate and chocolate sprinkles mixture then place between layers of parchment paper in an airtight container. Refrigerate until hard.

Note: When hard can place each roll individually in fancy paper and place in a decorative tin.

 
oh dianncy! I just saw this post - these sound wonderful! I've finished my Christmas baking...

but I am going to try these soon as candidates for next years' baskets. Do they need to be kept refrigerated once they set?

Do you just shift the cocoa?
My brother is a Black Forrest fan and this sounds right down his alley!
