Interesting smoked salmon recipe but it reminded me what I dislike about
Food and Wine and probably what many people like about it. They dumb down the recipes for us inept peasants. i.e. why not try to form the cornets instead of settling for flat?? Sometimes the dumbing down completely transforms the recipe to take-out grade concoctions.
