Rethinking dinner

I noticed that I made this soup to go along with Meatloaf sandwiches

which is something else you can do in the mornings and then put in the oven later. I have been buying those prepared mashed potatoes (Simply Potatoes is one brand) and they are pretty good. I just heat them in the micro and add some butter, grated cheddar cheese or whatever cheese and some sliced green onions. Pretty darned good!

 
Orchid, I have been purchasing the pots also. Can't beat the ease. They do taste good and

relatively inexpensive. They often go on sale here for less than $2.00. I add butter, sour cream or whipping cream to spruce it up.

I will have to give your tom soup recipe a whirl.

 
also rice cooker. make your rice, or pilaf in the morning and it will keep warm till dinner.

my Filipino co-workers make a pot of rice every single day like this

 
I feel so bold about this recipe to say you will really like. Just DON'T

skip the sherry vinegar. And I sure hope no one makes it here and uses balsamic and then say they didn't like it. LOL Actually, that happened to me here once and it kinda chipped me off.

 
Well, I had them maaannnny moons ago but these are not powder.

They are mashed potatoes in a container. You just heat them up. Maybe the powder kind is better now but these work for me. I buy them once in a while when they are BOGO and they make my life easier. There are several different brands but I sure think of a different name right now.

 
Safeway and Fred Meyer have them in the deli section. I think Shedd's Country Crock is one brand

 
So since we're talking about easy good outs I'll add another

that I sometimes have around. There are also a few different brands of these but here are Hormel Entrees at the link. When I fractured the discs in my back I had to have a little help and I had seen so many of these sold when I worked at Publix. I still buy them occasionally when they are BOGO. I tend to buy the ones that have some type of gravy so I've bought the Salisbury, Stroganoff, Pork Roast and Beef Tips. It's enough for 2 people and with the mashed potatoes and a salad it's a pretty good easy meal. I don't do them often because I like to control salt a little more but occasionally. makes a great quick meal for the 2 of us, with a bit leftover
