Maria, no I've only served it on the table as a relish with dinner.
But I'm sure there are many other uses for it.
Cheezz, re: canning.  The wonderful thing about this recipe is that it is fresh and not cooked.  Canning would turn it into a cooked sauce and it would no longer be a fresh relish.  I'm sure it would taste good, but it would just be a very different result.
