roasting tomatoes for the first time..what is wrong?

Steve, you might want to try this Tomato Jam from Martha Stewart.

I've been making this for a long time and it is really good. It's a great condiment to sandwiches, chicken, beef, pork and my favorite...meatloaf sandwich. One time for a party I made a huge platter of little sandwiches using small rolls and I made some of them with the Tomato Jam. Those with the Jam were the biggest hit.

Tomato Jam

Recipe By : Martha Stewart
Serving Size : Makes 1 1/2 cups

1 tablespoon extra virgin olive oil
2 small cloves garlic -- minced
1 tablespoon ginger -- peeled and minced
1 small red onion -- finely diced
1 28 oz. can plum tomatoes
1/2 cup red wine vinegar
1/4 cup honey
1/4 cup packed brown sugar
1/2 teaspoon ground ginger
piece ground cloves
2 cinnamon sticks
2 whole star anise

Heat a medium saucepot over medium heat. Add olive oil, garlic, ginger, and red onion, and saute until translucent. Add tomatoes, breaking them up with a wooden spoon. Add vinegar, honey, brown sugar, ginger, cloves cinnamon, and star anise.

Simmer, stirring occasionally, until tomatoes have dissolved and liquid has evaporated, 60 to 75 minutes. Discard cinnamon sticks and star anise before serving. makes 1 1/4 cups.

I eat my tomato jam on crackers with slices of cheddar

I love it! But my jam is just plain jam, not spiced up. Friends I gave it to poured it over cream cheese and served it with crackers as an appetizer. I'm afraid to make it this year because then I eat too much cheese.

 
I ate a lot of them right out of the oven...

Then chilled, and put out on plate as part of antipasti, on a sandwich, and as a plate garnish, the pan juices went into a soup.

They're all gone : (

The peppers and garlic that were swimming in the juices were absolutely amazing as well. I did one sandwhich or all the veggies with a little pesto and a smear of mayo on toasted seeded rye.

That was unbelievably good.

 
kicking ketchup, the recipe in

the old Joy of Cooking is the best ketchup I've ever tasted. people were beggging me for jars of it. I called it "ketchup for adults."

Anyone ever try the walnut ketchup recipe?

Orchid, this looks good too but I'm starting to think that ALL these tomato jam are > >

little more than ketchup variations, give or take spice, sugar, etc. Not that I have any complaints mind you because I'm a big fan of ketchup and have several recipes in my "too-be-tried-when-you-have-enough-home-grown-tomatoes" file.

I don't mean to get all snarky but I think my issue may be about re-purposing a product name for added cache, you know, like calling meatloaf "beef terrine".

Nevertheless, I have every intention of continuing to try these things . . . so long as my french-fry and onion ring supply lasts.
