This beautiful, almost balmy Saturday started out by going to a funeral. Ended up being a nice afternoon talking to old friends and infrequently seen relatives. Find the silver lining, I guess.

I tried adding a little bit of concentrated limeade to a quart of whipped cream... it doesn't work - you just get grainy whipped cream. Don't know why it doesn't just flavor it, but it doesn't.

I am making a breakfast casserole for us for tomorrow morning. A mini version of the one I made for my sister and her company. They're using it tomorrow, so I haven't gotten any feedback from it, but it looked very good. It should go good with a gallon of oj.

Coupled it with chili and a loaf of Italian bread. They were welcomed (thanks for that suggestion).

Using leftover shredded chicken for something interesting tomorrow. 'Don't know what, yet, but something easy - maybe chicken and biscuits.

Busy week coming up - I should just defrost and cook something from the freezer, or forage around in my pantry. Sounds like that will kill 2 birds with one stone. Or 4 birds with 2 stones, or whatever ;o)

 
REC: Hearty Homestyle Chicken Pot Pie --- quick, easy, and uses cooked chicken

Hearty Homestyle Chicken Pot Pie

Makes 5 servings

2 cans Campbell’s Cream of broccoli soup
3/4 cup milk
1/4 tsp. dried thyme, crushed
1/4 tsp. pepper
4 cups cooked cut-up vegetables (broccoli, cauliflower, carrots and potatoes)
2 cups cubed cooked chicken or turkey
1 can (10-oz.) refrigerated flaky biscuits (like Hungry Jack)

1. In a 3 qt baking dish, combine the soup, milk, thyme, and pepper. Stir in the vegetables and chicken.
2. Bake at 400 deg. for 15 minutes or until mixture begins to bubble. Meanwhile, cut each biscuit into quarters.
3. Remove dish from oven; stir. Arrange biscuit pieces over hot chicken mixture. Bake 15 minutes or until biscuits are golden brown.
VARIATION: Top with melted cheddar or swiss cheese (grated) for the last 5 minutes of baking.

~Aside from brewing a pot of coffee, and warming some soup, I have not cooked anything today.

~Going to In-N-Out Burger for dinner smileys/smile.gif

~Have some pork loin chops in the fridge - wondering what to do with some of them for tomorrow's dinner.

~Baking chocolate chip cookies with the kids tomorrow

~I have two huge grocery bags full of lemons staring at me.

My Weekend Six

Went on a TJ’s run and stocked up in prep for the week of storms they are predicting. I’m sad eggnog is gone from the stores now. I know, I know it’s fattening...but I’m still sad.

Do apple taste test. Bought 4 kinds of apples to try and find something that tastes good. My last batch of all around standby favorite eating apples, Fuji, tasted so bland I tossed them.

Part of my New Year plan to get lots of stuff done with the house, called the city this week to put an end to the problems with their street tree’s roots that are invading my plumbing. Bad news, 50 yr old tree needs to come out and I get to pay for it along with new plumbing. Good news, I’ll be able to have sun loving plants.

Will make a batch of either Greek Lemon or DiaOKC’s Chicken Tortilla Soup. Dawn, either would be good for your leftover chicken.

Got a good batch of lemons ripe at the moment on my Meyer tree so need to think of how I might want to use them.

Purge pantry! This is actually a big step for me and something that was bugging me in the back of my mind for a long time. I have one big wall of shelves in the garage devoted to panty goods. Basically it is part of my past life with DDH but it was something hard for me to part with, but today started tossing it all. I’m not cooking for a crowd anymore and most of this is old. I’m going to throw out everything. Everything. I filled the garbage can till it felt so heavy I thought I should stop. This will take a few weeks one can at a time. It felt great...ok I couldn’t bring myself to toss the unopened bottles of white and black truffle oil that I can’t remember when I bought, but I will. I will.

 
Saturday six

One packet of hatch chili tortillas left -- really good with a jalapeno cheese omelet and bacon all rolled up into a breakfast taco!

Cleaned out the pantry to take stuff to the collection point for earthquake relief. About time!

Printed out Christmas pictures to send to folks.

Started reading The Help for Book Club next month.

Am totally out of fresh veggies and fruits in my fridge. I do have some wonderful triple cream brie that I want to use for stuffed artichokes. Hope I can find a couple of nice ones.

I've almost used up all the rice, pasta and bread too. I should use this opportunity to start Adkins again. What do you think?

 
Saturday Six

- the Forum disappeared just as I was looking for a marinade for tuna, so I had to make one up. It was not a great success. I should have asked DH to grill it for me, too.
- I was glad I had succumbed to temptation and bought two out-of season nectarines for salsa for the tuna. That was so good I finished the bowl for dessert.
- I'm still wondering why the health department in Gainesville would not accept my daughter's copy of her immunization record, and insisted that I fax it to them. Trip to Kinko's. She's going on an archaeological dig to Ethiopia and you wouldn't believe what it's costing us.
- I finally managed to remove a disgusting smell from my fridge. There was absolutely nothing nasty in it but the smell persisted. Today I traced it to the newspaper lining one of the crisper bins!
- In the process of tracing this, I found a tub of salmon caviar that DD bought for New Year and we never ate. We'll have it next time she comes down, luckily it's good until March. I probably need a recipe for blini.
- Found tongue at Publix right after DD went back up to college. She has been yearning for it, but I banned it as the bits attached are very likely to carry Mad Cow disease. But now I'm thinking that none has appeared in the USA so far, and our cows are slaughtered very young, so we can go back to eating tongue on the rare occasions it is available. As neither daughter is home (other one is on a Girl Scout ski trip), I will cook it and freeze serving portions in the stock. It would be too cruel to eat it without them.

Funny aside - we were eating oxtail the other night, and DD picked up a bone, inspected it, and remarked that the animal had been a baby as it's epiphyses had not gown together yet. (I think that was the word.)

he'd love to go back.

 
Saturday Six

Which actually started on Friday, with me whining for chocolate cake. None materialized.

1. DH made fajitas for dinner on Friday. Nice not to have to cook.

2. Wanted chocolate cake. Cadbury's and hot chocolate had to suffice.

3. Still wanted chocolate cake. But had cereal for breakfast; took Liam for his first swimming lesson. He's reserving judgment on the whole experience, but I think I will let my husband do it next time. Liam tried to nurse the whole time we were in the pool--I think I was a distraction.

4. Buttered popcorn for lunch and watched "Footloose." I know the story is cheesy, but it's my boy, Kevin Bacon (see, I knew this would be food-related). Plus, one of the great '80s movie soundtracks. Looked around the kitchen for more chocolate to eat.

5. Outback Steak House for dinner. How sad is it that I'm excited to out to Outback. I've got to get out of the house more.

6. Finally broke down and baked a chocolate cake at 10pm. Yum.

I was thrilled with In-N-Out Burger, with a sleeping toddler on my lap the entire time.

We should plan a girls weekend sometime. smileys/wink.gif

 
Saturday Six

1. Went to a lovely women's church breakfast for which I didn't cook one little thing. For once. Then wished I had because it was Yoplait cups, sweet blueberry bread from the store and some kind of scones. Not used to so much sweet stuff to start my day.

2. Decided to hit the mall and make another stab at finding brown shoes that fit. Been looking off and on for a year. Rains are coming and open toe won't work.

3. YES! After hitting 3 shoe stores, I stopped into Macy's and they had the perfect shoe (singular) on the sale rack.... half off!!! After 20 min. of trying to find it's mate in the back of the store, the clerk took my name and number to call IF they found it. Five minutes later (I'd only made it across the store to the jewelry), the clerk came running over holding the shoe above his head like a Heisman Trophy winner. For all MY trouble (HA!) he gave me another 20 percent off.... deal of the day.... boots for $30.

4. Starving at this point and GF and I looked for place to eat. She can eat about 20 things and they're all white... horrible condition. Couldn't find anything so gave up and came home.

5. Ended up eating leftover chunks of beef from previous night's tostada and garlic bread.

6. Dinner... snuck up on me as I hadn't planned anything. DH ate the leftover sesame beef and rice and I enjoyed comfort food - grilled cheese sandwich. Ok, so I was seriously devoid of really nourishing, healthy food today - and not a veggie in sight. Tomorrow's another day.

 
Sunday Six

I am finally getting around to backing up my files and drives on my laptop.

I think I am going to bake onion bagels today, they turned out so good last time.

I am also going to bake Bub some oatmeal cookies that he loves.

I need to figure out what I am going to make for the teachers on Tuesday!

I am planning on cleaning up my sewing area, it looks like a disaster hit it.

We will be watching the play-offs today and hoping that the Vikes will make it.

 
My Weekend Six

1) My weekend started on Friday.
Until now, I have shopped groceries and I have cooked dinner every night. I also walk the dogs after I get home from work. This has been a pain in the on Friday nights, since I do my grocery shopping on Fridays after work. The traffic is usually horrible, I get home late and then I need to walk the dogs.

So we agreed that DH would be cooking on Friday nights from now on. He had his first cooking night on Friday, and he served home made hamburgers. They were really good!

This means 52 less dinners to cook a year for me - and dinner on the table before 10pm on Fridays. I'm THRILLED!

2) The temperature is finally more liveable (we have been down to -24F) so I decided to take the dogs for a long walk yesterday. Right before I walked out the door, DH decided to go skiing, and he took the oldest dog with him. I and the youngest walked for an hour and a half, and we had just gotten home when DH called and said that the dog had run off. (Apparently, they met another dog on the loose, and the two dogs decided to go and have a great time).
Two hours later, the dog was still gone, the police was involved and I was in tears. Out of nowhere, we got a call that a local farmer had taked the two dogs in and called the police. I was so relieved I completely forgot to yell at DH for letting the dog off the leash.

3) Made Evelyns Briami for dinner. I love, love, love her Briami!

4) I have so much Briami left over, it will keep us fed for another two days.

5) I know my Christmas tree is long overdue, but I love having all the lights in my living room. It looks nice and smells nice too.
We don't put up the tree un til December 23rd here, so I don't feel bad about keeping it up for an couple of extra weeks. After all, it took a lot of work getting it inside and decorating it.

6) I haven't made dessert in a long time. I found a ton of lemons in the basement fridge yesterday, and I'm thinking about maling lemon sorbet. I will do a dearch in the FK archives as soon as I have posted this.

 
Too funny. I consider In-N-Out to be a cultural phenomena...

...thereby trumping Outback, which is just mediocre food (although the garlic mashed potatoes were great). Plus, we had to wait an hour for a table.

I just don't understand this--the chain restaurants here are always packed on the weekends, and there are lots of local, independent places that could really use the business. I admit to being a bit of a snob about restaurants and would prefer a local diner over Olive Garden.

But, still, it was nice to get out of the house.

Lisa, we should definitely plan a girl's weekend!

 
Weekend six:

1. make the sweet potato pudding cake from Eating Well just because I am craving a piece. It is supposed to chill for 3 hours before cutting. I couldn't wait, it was still warm and was quite good, DH LOVED it. I look forward to a thoroughly chilled piece today.

2. good friends are having a shower for the son and DIL to be. It's a family affair and she asked me if I would bring some heart shaped cookies. I made some linzer type ones, some with raspberry jam and some with chocolate, arranged them on a dark red plate and sprinkled them with powdered sugar. I got lots of compliments on them and several requests for the recipe. Surprise ingredient: mascarpone cheese!

3. want to make Vegetable Jalfrezi from my new Jamie Oliver book. Bought all the stuff and started with the paste. I can't get it to "whiz" in the food processor. It is not wet and not dry so it just sites there as the blades spin around. How to I get it to turn into a paste?

4. need to get in some exercise both days, Sat was a success. It is supposed to rain all day today so running might not be a possibility. If I have to exercise I want to be outside, may have to explore indoor possibilities. I have Cox cable and someone told me there are lots of workouts on the Freezone channel. Maybe I will have to check them out.

5. to keep up with New Year commitments I need to spend some time today purging in the basement....YUK.

6. get a good start with this months book club book, Stones to Schools.
