This time we did 'Holiday Baking' - essentially one bowl recipes that can be mixed by hand. So I tweaked Pat_NoCal's Really Rich Banana Bread - which is fantastic(melted the butter),and added chocolate chips. Also made Pumpkin Chocolate Chip Bread. Although we didn't make bread - instead we made muffins. I bought enough muffin pans so that each girl could take one home, as well as cellophane bags and ribbons for the girls - so that they could nicely package their homemade goodies and give them as gifts.
The girls had a GREAT time. We divided into groups of 3 and 4 and each group made a recipe of each. The girls had great fun and by the time they got to the second recipe they were old pros! We also melted some chocolate in a ziplock - snipped off an end - and personalized our muffins! Unfortunately I couldn't get the reg. ovens to work at the community center where we held the session -but fortunately I was able to get the convention ovens to work.
I am so proud of this group (called 'Girls Group'). The volunteers involved give so much of themselves. This morning, before our sessions, the junior and senior girls were picked up by volunteers and taken for SAT and ACT prep sessions. College wouldn't have even been in the radar for these girls if it wasn't for the devotion and support of the many volunteers and contributors. And throughout the week the girls have tutoring sessions, as well as sports, book club, and so many other wonderful opportunities. And the girls are just amazing - a joy to be around. They come from such different and hard backgrounds, not to mention they are extremely poor, but they feel that this organization is a safe haven that really cares about them. I feel fortunate to be a part of it.
Jerry, my DH, joined me as my sous chef/dishwasher - he definitely had the harder of the jobs He was wonderful to have nearby and the staff loved having a husband/wife working together since most come from (very) broken homes.
For all of those that have contributed suggestions/recipes for these sessions - I want to give a heartfelt thanks. Even if I didn't get to use them - I want you to know that I have filed them away for future use.
