Simple things to grill

I need ideas of simple things to grill that can be prepared without a kitchen.

We had a leak in the wall behind our kitchen sink. There were floods, so for a couple of weeks I had a kitchen but no sink. Seeing we had to rip the whole sink unit out, and that I had been promised a new kitchen eight years ago which never materialized, we ripped the whole kitchen out, at the end of March. We now have the cupboards, but no countertop, floor or backsplash - everything has been d.r.a.g.g.e.d.out. Although I love my IKEA cupboards, we're not impressed with the installation, and are still waiting for someone to turn up to do the last little bit.

To make everything more complicated, I had knee replacement surgery four weeks ago, so couldn't do much. We have eaten all my prepared frozen meals stashed in the freezer. I tried some ready meals from Costco - the curry was good, the lamb shanks very bland. DH doesn't like prepared foods, or takeout, but is prepared to grill on our gas grill whenever asked to.

So we have eaten steak, Portuguese marinated steak sandwiches, pork chops, lamb chops quite often. Tonight we tried chicken breast with Sunny Paris, which was very good. Can you suggest anything else that I can prepare without a kitchen, a sink and with minimal implements? DH doesn't approve of burgers, and I can't figure out a way to make mashed potatoes to go with sausages. Are the chilled mashed potatoes any good? I've never tried them. We do have a microwave.

I forgot - we also do mahi mahi and tuna.

Suggestions will be most appreciated.

One of our favorite grilled dinners is grilled polenta and grilles veggies. I usually make the polenta, but you can just use the prepared version sold in markets.

Yes, we love grilled vegetables, but we usually do them in a basket, and I quail at the idea of scrubbing the basket in a small bathroom sink. It's a great idea, though, we could do them on skewers instead. Sadly, I'm not a fan of polenta, unless it's mixed with lots of chopped collard greens and fried, the way my MIL used to do it.

Here's a thought since I just found it myself: Walmart 5-gallon buckets are FOOD-SAFE! So perhaps you can use on for scrubbing up bigger items and put ice ON THE TOP of food that is marinating (cold drops, heat rises. remember this when the 18-year old at Whole foods wants to put your bag of ice on the bottom of the carrier bag.

If you can marinate using the iced bucket concept, marinated chicken thighs are great. They were designed for the grill. Ha! I went looking for the recipe and found YOU!

Oh, we do have a fridge, thank goodness. It just keeps moving from one side of the kitchen to the other depending on what's happening. I had forgotten that recipe, thanks! Not sure if I can cope with all that prep, though, and my microplane is packed away, so garlic is hard to process. But maybe I can do some wiggling and adjust, because that recipe is so delicious.

i also like the stupidly simple teriyaki pineapple tri-tip in t&t. We cut and grill them in portions. I’ve cut individual portions and frozen them so they marinate when thawing.

grilled cut up fryer chicken slathered In store bought bbq sauce. Grilled salmon, grilled pork tenderloin, grilled kebabs, grilled shrimp, grilled cabbage, grilled pizza, grilled chicken sandwiches, whole chicken and make salads and sandwiches for the week, grilled unopened corn on the cob, grilled crostini with burrata, figs, & prosciutto - drizzle w balsamic (ditto bruschetta), grilled veggies, grilled peaches…I’m in California, we grill everything, lol. We even grilled a turkey every year at thanksgiving.
