REC: Chinese Salad Dressing. Sort of off the subject, but very good for salads with Oriental menu
From The Art of Chinese Cooking by the Benedictine Sisters of Peking.
"Mix 3 Tbl. vinegar or lemon juice, 3 Tbl. soy sauce, add 1 Tbl. sugar. Add 2 Tbl. salad oil slowly, stirring constantly.
Use with cucumbers, cabbage, lettuce, tomatoes, or any other vegetable. It is delicious on bits of leftover meat. For additional flavor, add 1 tsp. fresh ginger, chopped, to the salad. The dressing may be made in advance and does not need refrigeration."
My tweaks: I double the recipe, use 1/2 white wine vinegar and 1/2 lemon juice, and add grated ginger to the dressing.
