I checked out 'Soup, A Way of Life' by Barbara Kafka from a library

a few years ago and made her devine Beef Barley Soup which I've posted here.

You also might want to check out this link for Soup Song. It's loaded with soups. I made their Thai Corn and Crab Soup and it was great but would like to add just a tad of green curry paste to it next time for some subtle heat.

It is actually very reminiscent of Chicken Enchiladas Verde... in soup form. Delicious!

 
Carianna, give this crock pot recipe a try. It's more of a stew that I

serve over rice or top with a poached egg. I made this recipe again yesterday, using navy beans instead of red and I like it better. It's not as colorful but I like the type of bean.

Also, this go around, I skipped the green pepper, and used 2 yellow onions. For the onions/garlic sautee, I got them darn near caramelized before I threw them into the crock pot.

In the end, I added some seasoning salt & shredded the meat. Done.

That's about it-however-no chilis-my tweeks=more like what I had, they used shredded leeks but

I've used scallions added at end. Also couple of slices of crispy bacon or panchetta or any kind of smoked ham shredded. I skipped the creme fraiche and used 3 oz pkg cream cheese. To thicken it I cubed a russet potato and cooked it in the broth and blended it into the soup before adding the crispy baon and scallions add mustard causiously depending on strength. I used regular brown mustard and threw in a few mustard seeds. There are several versions of this soup but this got me closest to whatr I had in Holland. excuse typing-injureed wrist.

The surgery isn't final anyway... you still have to have it done again and again smileys/frown.gif

I've had it in both wrists for about 15 years
