Stupidly simple sides for weeknights?

Very simple, half cauliflower and half broccoli in the microwave with a 1/4 c water and a sprinkle

of fines herbes for 7 minutes, drain, add a teaspoon of butter and a sprinkle of Parmesan. The veggies are chopped into florets too. Stupidly simple but really tasty and when I am in a hurry it fits the bill. Leftovers chopped up are great on top of pasta too.

 
Have done that many times as well. Zucchini is a nice addition to the plate..I put

the thickly sliced zucchini in the center then the cauliflower and broccoli around the perimeter of the plate with stems facing outward. I dribble a few drops of water over the veggies then cover tightly with saran wrap and microwave. Works great for a fast veggie fix.

Stir-fry of Asparagus with Cashews

1-1/2 lbs. asparagus
2 tbsp olive oil
2 tsp sesame oil
1 tbsp finely chopped fresh ginger root
(P's note: sometimes I add a little sliced onion too)
1/2 cup coarsely chopped roasted cashews
1 tbsp soy sauce

Cut off the rough lower stems of the asparagus and discard. Cut each stalk diagonally into 2 or 3 pieces. Heat the oils together in a wok or heavy frying pan over high heat. Add the ginger and stir-fry for 1 minute. Add the asparagus and stir-fry until tender but still crisp about 4 or 5 minutes. Stir in cashews and soy sauce. Serve immediately.
Yield: 6 servings.
