Sweet Potato Puffs

Sweet Potato Puffs - Diabetic

2 pounds sweet potatoes or yams

1/3 cup orange juice

1 egg, lightly beaten

1 tablespoon grated orange peel

1/2 teaspoon ground nutmeg

1/4 cup chopped walnuts

Preheat oven to 375 F. Spray cookie sheet with nonfat vegetable spray.

Peel and cut potatoes into 1-inch pieces. Place in medium saucepan, cover with water, and bring to a boil.

Cook 10-15 minutes or until tender.

Drain and place in a large bowl and mash until smooth.

Add remaining ingredients except for nuts.

Spoon mixture onto cookie sheet in 10 mounds. Sprinkle with nuts.

Bake 30 minutes.

Makes 10 servings.

Nutrition information per serving: 126 calories, 25 calories from fat, 3 g fat, less than 1 g saturated fat, 21 mg cholesterol, 23 g carbohydrates, 18 mg sodium
