I am greatful to all those that helped me find my childhood Christmas recipe for what I recalled as a cold wheat soup, Now I know better as its called Kutia.
Well I scoured the net and found a couple recipes but nothing looked quite right so I made my own and want to share it with you folks here. I made this starting this morning about 3:30 AM, and WOW, "I Like It" so does my wife.
Kutia Ukrainian Traditional by SKalynuik
2 cup wheat berries
3 qt water
1 tsp salt
1/2 cup poppy seeds
1/3 cup sugar
1/3 cup honey
1/3 cup Walnut; pieces
1/3 cup raisins
Kutia is a sweet grain pudding, traditionally served in Ukrainian, Lithuanian and Polish cultures. Kutia is often the first dish in the traditional twelve-dish Christmas Eve supper (also known as Svyateh Vetchnyat). The wheat represents the staff of life, the honey represents the Spirit of Christ. It is rarely served at other times of the year..
Wash the wheat and soak it in cold, salted water overnight (or 12 hours) in a 4 ltr lidded pot. Then, bring wheat and salt mixture to a boil, simmer for 3 - 4 hours, stirring every 30 minutes, until kernels burst open. Scoup of 2 cups of the liquid and save. Strain the remainder of the wheat and return to the pot. Add sugar, poppy seeds, honey, walnut pieces and raisins, stir in evenly and cook a further 15 minutes over medium heat.
Serve hot the Eve before Christmas or more traditionally, cold, as a Christmas morning starter.
Note: Can serve also by adding a little cream or milk.
Serves 8 to 16 depending on serving size.
