Thanks to Ang/AK and LisainLA for suggesting that I serve the ricotta poundcake upside down.

Not sure what I'm (still) doing wrong, but I got the big indentation AGAIN. Tried all the hints that everyone graciously gave the last time I asked, but apparently I fail Rising Agents 101.

This time I actually groaned aloud when I took it out of the oven: it had collapsed again, a dinner party was coming up in a few hours and I was Dessert. Flipped the loaf onto a cooling rack and immediately recalled how you guys suggested that I just serve it upside down.

Worked like a charm! Served it with fresh strawberries coated with my freezer strawberry jam and lemon zest, along with tiny scoops of Pomegranate & Dark Chocolate Chip ice cream by Sheer Bliss.

Glad it worked out for ya, Mar, but you've gotta stop mentioning that

ice cream before I go to the store and buy it, eat the entire container (can't waste it) and blow the eating plan smileys/wink.gif

and you could be very "green" and recycle the tin in the sewing room for a button tin, or M&M stash.
