the last two meals I cooked were just gak :-0 they were so bad that

chicken cacciatore is great served over pasta. and coq au vin served any way you like. yum

both rather easy and kind of casserole-ie and even better heated up the next day. There are lots of recipes out there for these,and I think Julia has a killer coq au vin in one of her books.
For a quick dinner, I heat up the frozen chicken or pork potstickers and then add some stir fry veggies and some yoshida's sauce, all in one pot yumminess and protein/carb/veggies for everyone. Let him eat the potstickers and add some leftover meat or some oriental seasoned meatballs for you.

 
Maybe Randi's being protective of her gorgeous new kitchen? I say haul out that Wok and go for it.

Let Randi pour the wine and sit at the bar stool and enjoy the show. At least once a week.

and felt like the princess I've always thought I was '-))

I have to say, he spent two hours trying to make me something special, a chicken florentine without a recipe. pretty adventurous in my book. to make a long story short, it didn't turn out well but it's the begining of him cooking at least once a week.

annd, what's just fantastic is that he will be my sous chef and learn some of the basics that he needs to know. he had never made a bechamel and tried to without a recipe. how brave and how endearing is that!

it was fun and he wowed me with his efforts to stay within my food guidlines. my hero!
