There are times when living in Quebec is pretty cool...

Blue berries freeze very well. I use them in pancakes and freeze those too, to have for company,

grandkids, and my hubby. Blueberry muffins are great, use in smoothies, green salads and I have seen blueberry sauce served with some meats.

 
Have either of you separated the eggs, then folding in the beaten whites?

Roland Mesnier, the pastry chef at the White House for 25 years, follows that method for his blueberry muffins.

I was going to give it a shot.

when I searched for Blueberry Muffins, lots of members use this recipe.

 
Quick Fresh Blueberry Spread or Jam. Great on toast or English muffins.

Blueberry Spread

2 cups blueberries (I use frozen)
¼ to ½ cup granulated sugar (to taste)
Cook a few minutes until berries release juice.

Add:

1 teaspoon tapioca
and boil about 1 minute or so untill thickened, Stirring gently.

 
Great idea, Dawn. Let me know how it comes out. I am moving on to

raspberries since I am on the brink of a bumper crop (please, please stay dry!!!).
