These are wonderful! Momofuku's Soy Sauce Eggs

Sally...I had a friend who definitely was not the foodie as we all are here

and she loved avocados. One day, I made a salad using fresh corn cut off the cob, avocado, garden tomatoes, maybe a few other items with a fresh lemon vinaigrette. I knew I had to share it with her because they had tomatoes in the garden. When I told her about it, she said, "why would I want to waste a perfectly good avocado in that salad?" So, I understand what you said!

 
that's funny! Although I do love avocados in salad... but

maybe too much of a purist as far as boiled eggs go!

I think cider vinegar would change the flavor considerably. Sherry is a bit more mellow, and

blends better with the soy sauce. I saw your other note about not liking them. That substitution would throw me off too. smileys/smile.gif
