This is a dumb question, but how do you plan/pace your holiday baking?

My trick--I mix fresh sausage/ground chuck/whatever w/ what might have been in the freezer

a "little bit" too long. That will cover a multitude of forgetfulness, but just make sure the ratio of fresh to freezer-stored is way higher on the fresh side! Been there, done that. ha!

I defrosted our big chest freezer this past weekend and was pleasantly surprised when I discovered two 8x12" pans of lasagna MADE THIS PAST SUMMER! Who-hoo, that recent of a date tag is equivalent to FRESH in our house! lol!
