This looks good: Jamie Oliver's Tray-Baked Chicken

I liked this a lot; DH was not impressed.

He said it was too bland and the potatoes too mushy. I didn't have a problem with the potatoes, but the sage is a very delicate flavor and perhaps not for everyone. We'll see if he likes it better after its sat for a while. Sometimes it takes overnight for the flavors to blend.

I'd do a couple of things differently. First, I'd halve the recipe. It was far too much food for two people (plus a toddler). Second, I would use chicken thighs and legs instead of breasts. I think those are smaller and easier to handle than the breasts. Third, I would add in more garlic to give it more bite. And fourth, I would use more onion in the potato mixture.

 
This would be great with more aromatic type veggies.......fennel, carrots, etc. I would use rosemary

instead of the sage. Serve with mashed potatoes which have been infused with garlic.
