RECIPE: This will be my next venture, REC: Ginger-Pear Preserves

RECIPE:
I love homemade pear preserves, overcooked just a little so that when

they are cold they are sticky-chewy like caramel or toffee. There is a very fine line here between this stage and burnt sugar. There are pear trees down here that people call sugar pears that are not very good eating but make really good preserves. They are very smalll and it takes forever to peel and cut up a batch because they are more core than fruit.
