M, a hint in the cookie college site that Barb VA posted discusses the density of the icing.

She made it clear that the thickness impacts how the icing will spread and how to make dots or draw straight lines. Unfortunately, I watched quite a few video clips so now I'm not sure which one it is.

(well, that wasn't very helpful, was it.)

One video mentioned "10-second rule" for the thickness.

 
I think this would make a great Easter cocktail: REC: Rhubarb and Strawberry Collins

Think I'll do raspberries because I can't eat strawberries....


RHUBARB & STRAWBERRY COLLINS COCKTAIL

1.5 oz Gin or vodka
.5 oz Aperol
.75 oz Rhubarb Syrup*
.75 oz Fresh lemon juice
.5 oz Fresh strawberry juice (or 2 muddled strawberries)
Club soda

Garnish: Pickled Rhubarb** stalk and lemon wheel
Glass: Highball

HOW TO MAKE THE RHUBARB & STRAWBERRY COLLINS COCKTAIL

Add all the ingredients except the club soda to a shaker and fill with ice. Shake, and strain into a highball glass filled with fresh ice. Top with club soda and garnish with a pickled rhubarb stalk and a lemon wheel.

*Rhubarb Syrup

INGREDIENTS:
2 qt (64 oz ) Water
8 cups Sugar
4 cups Roughly chopped rhubarb

PREPARATION:
Add all the ingredients to a saucepan and cook over low heat, stirring until the sugar dissolves. Cook for 5 minutes more, turn of the heat and let cool completely. Strain, and store in the refrigerator for up to a month.

**Pickled Rhubarb

INGREDIENTS:
2 tbsp Coriander seeds
3 tbsp Pink peppercorns
4 cups Sugar
1 qt (32 oz) Raspberry vinegar
4 cups Rhubarb, trimmed and chopped into 3-inch lengths

PREPARATION:
Toast the coriander and peppercorns for a minute or two in a saucepan over medium heat. Add the sugar and vinegar, stirring until the sugar dissolves. Chill the mixture in the refrigerator until cold and pour over the rhubarb. Refrigerate for at least a few hours before using.

Papas Opera Cream Easter Eggs for me!...

This is a local family candy shop that has been turning out their hand-dipped opera cream Easter eggs since before I was born. They were always in my basket growing up and now I'm putting them in the grandkids easter baskets. Dark Chocolate Opera Cream and Cherry (a gigantic dark chocolate covered cherry with liquid center and fondant) are my two favorite flavors. They also come in pineapple, mint, coconut, vanilla, chocolate cream, and a couple other flavors.

I know its spring when the displays hit the stores and I can never resist. I haven't had any for a couple weeks now (atkins), but on Easter, look out, I plan on downing a half dozen.

If you ever pass through Cincinnati in March-April, look for these (most drug and grocery stores) usually have them. They're usually in displays by themselves still in the cartons they were packed in with colorful color-coded foil wrappers (dark blue for opera cream, red for cherry, gold for pineapple, etc.), but when Easter comes, they are gone--(actually,by Good Friday, most stores are usually cleaned out and there is a frenzy to find the last ones available--which reminds me, I need to stock up for my Easter binge, wouldn't want to have to raid the supplies to fill the Easter baskets smileys/wink.gif.

If I travel this time of year, I ALWAYS take along the Papas. They've been to NYC, France, Germany, Turkey, Egypt, Hawaii, etc. And this Easter they will be visiting Washington DC and Baltimore! LOL
