Uses for rhubarb juice?

I thawed several bags of frozen rhubarb, which gave off more liquid than I wanted in my compote, so I drained most of it off before cooking the rhubarb. I have nearly 2 cups, and while it's delicious on its own, I wondered if anyone has bright ideas for using it in other ways. Thanks.

 
I love that combination and think it would be really great....

I just made this cranberry salsa with jalapeno, ginger and mint. I'm thinking ginger and mint would be a nice combination with rhubarb and pom.
