We need a Kid Friendly section...I need to come up with some ideas for a young family

I think some frozen foods might come in handy.

I freeze a lot of things for convenience. What about mini pizzas made on English muffins, mini meatloaves, waffles, pancakes, sausage patties or links, twice-baked potato halves, breakfast burritos, savory burritos, meatballs with sauce and gravy frozen separately, hash brown casserole (I freeze this in patties on a baking pan and then store it in bags or containers in the freezer), sausage muffins (I have a good recipe from the swap), stratas, soup, chicken salad, egg salad, tuna salad (they can be made into sandwiches or wraps), goulash, chicken and rice, rice pudding, muffins, mini quiches, roasted chicken legs, scalloped potatoes and ham, and cheese enchiladas. She sure has her handsful.

I've been making a lot of these lately and made literally about 100 of them for Easter. The kids love them - everybody does. You can get as creative or as simple as you like with them too. Sometimes I'll put cheddar slices in the slots or parmesan on top which melts to a nice crust. But sometimes I'll just go with some oil (I use grapeseed or olive) then salt and pepper or maybe some of my home made powered chives or powdered leeks. Lawry's seaon salt also a good choice. I saw one recipe that had you put garlic or onion in the slots. Regardless prep time is minimal if you have half way decent knife skills.

I've been meaning to give these a try! Tetrazzini was a bust (mom loved it); bread was a big hit

Butterscotch banana pudding went over well. I think the wine flavor in the chicken was what put the kids off....simplify, simplify, simplify!

Think I'll stick to individual pizzas and grilled cheese.

 
These: REC: Sausage and Cheese Muffins

Pat posted these, I dip them in melted butter and then roll the tops in parm cheese. I have also made them with Italian sausage with onions, and green and red peppers.

Sausage and Cheese Muffins

½ lb. ground pork sausage
2 cups all-purpose flour
2 Tbsp. sugar
1 Tbsp. baking powder
¼ tsp. salt
1 cup milk
1 large egg, beaten
¼ cup butter, melted
½ cup shredded cheddar cheese

Brown sausage until it crumbles; drain & set
aside. Mix flour and next 3 ingredients.
Make a well in the center. Combine milk,
egg, & butter. Add to dry mixture, stirring
just until moist. Stir in sausage and cheese.
Line muffin tin with paper baking cups. Spoon
batter into cups, filling full. Bake at
375 degrees for 20 minutes or until golden
brown. Remove immediately.

Yields 12 muffins

Meatballs! They are always a hit. A big bunch of grapes or a fruit salad. Very kind of you to

make some meals. I am sure they are appreciated.
