Well, I did it again. Took a couple of steaks out of the freezer and tossed them on the counter.

in the rare chance that you're not planning to do them well done,

please enlist the help of a medium to let you know what's gonna happen.

 
Remember, with steak, the germs are on the outside, so as long as the outside is seared

you should be fine even with rare meat. Now with chicken, the germs are all the way through the meat, so I am much more careful with chicken than with beef or lamb. But then, I *like* my chicken seriously overcooked.
