What are people making for Easter Dinner?

tender green beans with browned butter and almonds. The stuffed tomatoes up in favorites.

Roasted asparagus. Just a few that come to mind.

 
Rec: Minted Peas - easy, good

1 Tbsp butter
2 Tbsp onion powder (or grated onion)
1 tsp lemon zest
1 10-ox package frozen petite peas thawed
salt and frshly ground black pepper to taste
1 Tbsp fresh mint , chopped

In a medium saucepan, melt butter over low heat. Add onion and lemon zest and cook gently, stirring occasionally, for about 4 minutes.

Add peas, and stir to combine thoroughly. Season with salt and pepper. Cook, until peas are heated through. Stir in mint and serve immediately.

 
Roast beef, garlic mashed potatoes, asparagus w/lemon butter, and the traditional...

strawberry shortcake.

Also angel biscuits and/or bran muffins with spritz cookies.

 
I LOVE these choices. And, I'm yet to learn another thing from FK - Dawn, what is an angel biscuit?

Honey Angel Biscuits - great for do ahead

1 package active dry yeast
2 tablespoon warm water (105 to 155 degrees F)
5 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup shortening
2 cups buttermilk
3 tablespoon honey

1. Combine yeast and warm water in a 1-cup
liquid measuring cup; let stand 5 minutes.

2. Combine flour, baking powder, baking
soda, and salt in a large bowl; cut in
shortening with a pastry blender until
mixture is crumbly.

3. Combine yeast mixture, buttermilk, and
honey, and add to dry ingredients stirring
just until dry ingredients are moistened.

4. Turn dough out onto a lightly floured
surface, and knead dough 1 minute.

5. Roll dough to 1/2-inch thickness. Cut
with a 2-inch round cutter, and place on
ungreased baking sheets. Bake at 400 degrees
F for 10 minutes or until golden. Yield 4
dozen.

You can store unbaked dough in the refrigerator in an airtight container up to 1 week.

Rec: Not-as-Sweet Angel Biscuits

Tim's Grandmother's Angel Biscuits for those
that asked...11 Jul

5 cups a.p. flour, sifted
1 tsp. soda
1 tsp. salt
3 tsp. baking powder
3 tbls. sugar
3/4 cup shortening
1 packet of yeast (2 1/2 tsp.)
2 cups buttermilk

Dissolve yeast in warm water. Sift dry
ingredients into large mixing bowl. Cut in
shortening with a pastry blender. Stir in
buttermilk, work into a dough. Place in a
greased bowl, cover with plastic wrap and
place in fridge overnight.

The dough lasts about a week in the fridge.
You pinch off what you need, roll or shape
into 1/2-thick biscuits and bake at 400F for
12 minutes or until golden brown.

These are a real treat and totally yum, the
only biscuits I will eat. A basket of these
on the table when company comes disappears in
minutes since most people have never had
yeast-raised biscuits. And, they are really
easy. With the dough in the fridge, you can
have fresh baked biscuits in the time it
takes to heat the oven and bake.
