What are your most unusual sandwich combinations, ie, sandwiches with

ingredients that typically don't go together, but surprisingly work well.

I tried this sandwich a long time ago, even though I thought it sounded odd. It ended up being delicious.

TOMATO OPEN SANDWICH WITH PEANUT BUTTER

INGREDIENTS:

2 slices whole-wheat bread

2 teaspoons fresh, natural peanut butter, unsalted and unsweetened

1/2 large tomato, sliced

2 to 4 romaine lettuce leaves

salt and pepper to taste

DIRECTIONS:

1. Preheat oven or toaster oven to 400 F.

2. Spread the peanut butter evenly over the bread slices.

3. Place lettuce over each slice and top with tomato slices.

4. Sprinkle with salt and pepper.

5. Toast in the oven directly on oven rack or in a toaster oven for 5-7 minutes or until the bottom of the bread is slightly brown.

6. Eat immediately.

7. Serve with fresh fruit, if desired.

Makes 1 serving.

carrot sandwich... grilled pb&j

when I was a kid I'd take a couple pieces of wonder bread and slice up a raw carrot and then put (way too much) salt on it. That was it.

Another one I started as a kid, usually as an after dinner snack was grilled peanut butter and jelly sandwiches. I actually still do that one occasionally. It is quite good but more like a dessert.

 
I do the grilled pb&j version for kids tea parties....roll wimpy white bread flat,

Cut off crusts, spread pb&j on one side, roll up and secure with toothpick, then bake in hot oven to toast. Kids love em.

 
I just took a liking to a whole wheat bread, "peppertizer" and. . .

chipotle-roaste red pepper hummus sandwish. Pretty tasty.

The "Peppertizer" is a very mildly spicy pepper-tomato-eggplant spread, and well, the chipotle-red pepper hummus is self explanatory, no?

I reeeeely like peanut butter and bacon. . . or avocado and fried eggs. . .

 
Unusual Sandwich Combos

We've been enamored with toasted bagels topped with hummus and avocado. Don't know if that would be considered unusual but it sure is tasty.

 
I love it on a toasted wheat sandwich thin - smear of hummus, sliced toms +

cucumbers, and topped with fresh basil. One of my favorite summer sammies.

I like the sound of red onion with this.
