Ingredients:

1 cup dry white wine
1 cup port (a rich sweet fortified wine)
1/3 cup rice vinegar
1 tsp. tomato paste
7 oz. persimmon (pared, pureed and put through a sieve)

Preparation:

Heat all ingredients in a small saucepan.
