What did you have for lunch today?

I was out and about in town and have some time to kill between appointments

so, I drove down to the Sacramento River, where there is lots of water fowl, all kinds of them. There is a kiosk there where you can get fresh made stuff quick. I got a Spicy Polish Kraut dog with spicy brown mustard and lots of sauerkraut, and an iced tea with fresh lemon. Then I sat back in my car, watched the beautiful birds and enjoyed the view we are so lucky to have in the middle of town.

Wasa multi grain crisp bread with my new favorite peanut butter Maranatha brand and blueberry jam

Fruit salad w/ chopped apple-banana-orange, 1/3 cp. plain yogurt and 2 Tbl. chopped toasted almonds

Richard, I love sardines, especially those packed in mustard sauce, unlike the oily

kind I was raised with. I used to chow down on sardines at work occasionally and my coworkers took offense! Of course those people probably have never experienced the pleasure of a simple, healthy, and delicious treat from the sea!

Photo in above post, here is REC: Romesco Sauce

I love this sauce, it's traditionally served with roasts, particularly roast pork, but when used as a sandwich spread it's brilliant!

Romesco Sauce

2 large red bell peppers, roasted
1/2 c toasted almonds
3 cloves garlic
salt
cayenne pepper

Puree almonds first in a Cuisinart, then add garlic, peppers and salt and process until very smooth. Add cayenne and blend well.

makes 1 1/2 cups sauce

From the Blue Eggs and Yellow Tomatoes cookbook

to make the tartine, spread the Romesco sauce on sliced artisan bread, then top with thin slices of prosciutto or ham, then top with Iberia cheese or Manchego. Broil until golden and bubbly and cut into thin strips to serve. Also good as "linner"!!

thank you thank you. and we posted right next to each other. we're having a dept lunch today, so

hopefully I'll have something more substantial, and healthier.
