What do I do with 30 egg yolks now that the whites went into the icing?

Ooohlala, talk to me about The New Spanish Table

Not familiar with it. Sounds like something I might like. Have you made much from it?

And the Cheese book....might that be the Cheeseboard Collective Works? If so, I also have that book but haven't made anything yet. Kept it because it did "spark joy" as I've had their pizza a number of times and loved it and one day will get around to cooking from it.

The New Spanish Table book is fantastic. I've made a number of things from it (my group

cover it) and it's awesome. It's one of my "over my dead body" books.

Yes, the Cheeseboard book...that's the one. It's a blast to read, and fortunately, the recipes hold up too. I went through a bread making stint, and made every recipe in the book that didn't require a starter. (6 or 7 recipes, as I recall.) I was super proud of all the bread. Their pizza recipes are terrific too. I especially like the tip about when the pie is hot out of the oven, to brush the crust with garlic-infused olive oil. The cookies are good too.

That tamale book is fantastic! Even if your husband doesn't like them, as I recall, you

entertain quite a bit. They're great to make up a bunch and have a stash in the freezer. They go straight from the freezer into the steamer and make a nice hearty appetizer or meal. It's also a fun interactive thing, which, I imagine in the Mexican tradition is why they make them at Christmas. The whole family gets involved. My cooking group made them once. Each person brought a filling, and I made a couple batches of masa. It was fun to drink and chat while making tamales. I like making them myself too. I'll make the filling one day, then stuff them another day. The actual assembly is a zen-like activity for me. I throw on a podcast or audio book and make a bunch. It's also one of those terrific shareable foods and because they're a little different, everyone remembers. "Hey, when are you making tamales????"

Glad you liked the cake! It's a winner, eh?

Yep, a winner!

I eat tamales every week when we go to 'our' Mexican restaurant for a weekday dinner (a chance to get out of the house!).
