You can order it from Penzey's, etc. It's a great herb mix. You can also make it yourself, but it

calls for dried lavender, which is not easy to find.

Here are two from my files ...

HERBES DE PROVENCE

1 teaspoon fennel seeds
2 teaspoons summer savory
2 teaspoons oregano
2 teaspoons marjoram
2 teaspoons thyme
1 teaspoon lavender
1 teaspoon rosemary
1 teaspoon tarragon
1/2 teaspoon ground sage

Crush the fennel seeds finely with a mortar and pestle (or use a coffee grinder or food processor).
Combine all the herbs in a small jar with a tight-fitting lid.

HERBES DE PROVENCE

List of Ingredients

2 tsp thyme
1 tsp basil
1 tsp marjoram
1 tsp French tarragon
1 tsp rosemary
2 tsp summer savory
1 tsp fennel seeds (crush with mortar and pestle or use a coffee grinder or food processor
1 tsp lavender flowers

Recipe

Place all ingredients in large bowl and crush with your fingers.

 
For this recipe, you could easily sub oregano, savory, thyme or a combination,

with maybe a pinch of some of the other herbs from Meryl's recipes if you have them. Formulas vary, and I don't think it matters if you're missing an herb or two.

 
Overall, I agree with you, but for me, the lavender's essential or it's just not herbes de provence!

 
Yes you're right about the lavender. But I'm still jumping up and down...

making Pee Wee Herman noises trying to get people to try this recipe and I'd hate for anyone to pass it up because they're out of lavender! I've made it with oregano and thyme with delicious results.

 
The recipe does sound great. I only eat chicken about once a month, but this one is

definitely on my to-try list. (And I do have lots of Herbes de Provence)!

 
Spend the money and order it from Williams Sonoma. I was given a gift of this

herb mixture. And I loved it. I have tried ALLof the others, and I encourage you to order the WS. It is excellent, and after having it, all the others paled in comparison.

 
I still have a lot left from Penzey's,but will check out the Williams-Sonoma one when I run out.Thx!
