What is your favorite chef's knife? I just broke my fav ceramic knife>>>

Agree with Sandra--the Victorinox knives are widely used in

kitchens. Took a class at Johnson & Wales, and while the students do have their own sets, the knives in the kitchen are the plastic handled, stamped blades.

 
See if your local butcher will sharpen it.

My butcher offers to take my knives and have them sharpened along with his by an outside service. It's not expensive to have done. P.S. I have the Henkels too. I think they dull fast!

Santoku Hollow Ground 4182 Cook's Knife for a little over $50 on Ebay! It looks great, and I've always been a fan of Wustoff.

I looked at the Global and Rachel Ray's knives, but like Sandra I too have problems with little handles, hurts my hands and wrists - darn it - cause they look so great.

I am now a total eBay fan - how amazing is it go get such below-retail prices...

anyway, can't wait to surprise my guy with such a nice knife. now we need a new blender!

 
That is what we gave all children two years ago for Xmas.

It's a great knife. I actually have a real cheapo Wusthof that I almost like better than that one (that retails for $80+.)

 
TracyB, generally, the Japanese knives are right or left handed. The German ones are not...

Henckles and Wusthof santoku knives would be fine, as well as the other knives in those lines.

It's the Japanese made knives, like Shun, that are right or left handed.

 
Tradition....

I was at a shower recently and the groom was a chef so his family got ALL the chef's knives he put on the registry (think he selected several because of price points - don't REALLY think he wanted all 4 chef's knives). But when the bride opened them her German mother went CRAZY - jumped up and ran and grabbed a jar with some coins in it. Made the bride give them a coin for every knife she opened. Then they explained their somewhat frantic behavoir by saying that the tradition is that you cannot accept a sharp object as a gift because it can cut the ties of friendship. So, you must pay a token payment to the giver to keep the friendship safe.
