What is your favorite chocolate cake recipe?

IIRC, the original article said to use Mexican chocolate, although the recipe didn't specify.

The article was about dishes from Mexico, such as mole, which use chocolate.

I had copied it from Gail's but could not find the original post or poster after the change. I like to make this in a loaf pan, then coat the whole loaf in the ganache---very smooth and shiny and makes pretty slices.

 
I make this one a lot: Olga's sour cream chocolate fudge cake with chocolate buttercream

FOR THE BUTTERCREAM: In a bowl, stir together melted chocolate and melted butter until blended. Stir in vanilla. Yields 3/4 cup frosting.

NOTE: If you own a microwave oven, chocolate chips and butter can be melted together by placing in a bowl and microwaving for 1 minute on high. Turn the bowl and microwave for an additional 30 seconds. Stir together until blended.

If you don’t have springform pan then use a regular 10 inch pan and put parchment paper or waxed paper to cover the bottom of cake pan. Grease and sprinkle with flour and the cake will come out.

He's a busy guy, and often takes long stints away from the forum. I miss him on the board as well, and hope he comes back to pay a visit very soon.

REC: Eula's Chocolate Sweet Cake

This recipe came from a woman I used to know in eastern Kentucky. It was from her MIL and it is a delicious cake.

Mix together and bring to a boil:
1 stick butter
1/2 C vegetable oil
4T cocoa
1C water

Cool slightly and stir in:
2C sugar
2C flour
1/2C buttermilk mixed w/ 1t baking soda
1t vanilla
2 eggs

Grease and flour 2 8" rounds. Bake at 325° for about 35 minutes.

 
Mexican chocolate has ground nuts and ground cinnamon so it is gritty! almost waxy,

I use my microplane grater when making hot chocolate with it, but it's tedious!

 
REC: Deep Dark Chocolate Cake - way and above my favorite!

I've done this is rounds, rectangles and cupcakes... it's always good

Deep Dark Chocolate Cake

1 3/4 c. flour
2 c. sugar
3/4 c. cocoa
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 tsp. salt
2 eggs
1 c. milk
1/2 c. oil
1 tsp. vanilla
1 c. boiling water (I use hot coffee)

Combine dry ingredients. Add eggs, milk, oil and vanilla, and beat on medium 2 minutes. Stir in boiling water (batter will be very thin). Pour into greased and floured pans and bake at 350 for 35-40 minutes, or until done.


My Best Chocolate Cream Cheese Frosting

1/2 c. butter
8 oz. cream cheese
1/2 c. cocoa
1 tsp. vanilla
3 c. confectioner's sugar
