What to do with leftover baked salmon?

I am so glad to have found this site! I have been reading and collecting recipes from Gail's since almost the beginning.

You can mix it with herbs & seasonings, of your choice >>>

and then, sour cream, and serve as a dip. Or, you can do a similar thing with the herbs, etc, & mix with a bar or two of cream cheese, then line a bowl with plastic wrap & put the mixture in, and, voila! a "mousse".
Or you can mash it up, add some seasonings, some bread crumbs & beaten eggs, and have salmon croquettes.

You can also saute chopped potatoes and onions with s&p, then

add the salmon to make a yummy hash. You could add a little herb of your choice, thyme, rosemary, etc. If you want to be fancy, you could top with a creamy mustard sauce.
I also like to make an omelet or fritatta using leftover salmon. You can add leftover veggies, too.

 
Salmon pasta salad?

Flake it up and mix with pasta and loads of chopped dill and a lite vinagrette or really good mayo...

 
Up here in Alaska we put salmon in pasta and on Ceasar salad and in patties. leftover mashed

potatoes is really good to add to the salmon patty mix. Add some smoke flavoring to the dip for a great flavor. Salmon wraps made with tortillas are really good too, or stuffed pitas. Using a Greek tzaziki(sp) sauce is yummy with salmon.
