What to do with leftover scallops?

I have a ton of scallops left over from tonights dinner. They were grilled with a light dusting of a cumin/chipotle/kosher salt dry rub. How long will cookied (edit: COOKED) scallops keep, and does anyone have any idea what I could do with them?

 
Serve them over linguine with a spicy cream sauce OR a garlic/oil/butter sauce.

(As is, they'll keep 3-4 days in the refrigerator or about 2 months in the freezer).

Use them in a rice salad >>

Season cold leftover rice or pilaf with olive oil, lemon juice, minced onions and chopped parsley. Add anything at all.

In this case add your scallops and perhaps some chopped red bell pepper, corn kernels, any leftover vegetables, queso fresco or feta cheese, almonds or pine nuts and perhaps cilantro instead of parsley. (I'm making this up as I go along.)

If this is too summery for January, make hot rice, reheat the scallops and fold in everything else.

 
I'd probably drop them into a nice, thick potato soup, corn chowder, etc...

Because it's COLD and soups are so wonderful this time of year. Wouldn't cook them though, just drop them in a few mins before serving because they would toughen. I can smell the biscuits cooking! smileys/smile.gif
