What will I do with all the plum tomatoes I'm going to have from garden soon. This was a surprise!

Ours won't be a surprise but a much awaited and worked for treat....

And I also thank you guys for these recipes! Fresh garden tomatoes grown in rich Missouri soil are incredible!

and to think I used to compost the suckers rather than root them. Love those Missouri tomatoes!

 
freeze them. just plop into a plastic bag and freeze whole. then plop into a sauce, straight from

the freezer.

 
Ang, wouldn't they have ice crystals and be watered down? I froze leftover spagh sauce and that's

exactly how it was, too watery...

 
If I'm adding it to a sauce that I'm cooking down anyway it doesn't matter. It won't give you the

"fresh chopped chunks" in your sauce, but it makes a fine sauce when you're doing a slow, long cooking tomato sauce, like a spaghetti sauce. They do turn into tomato ice cubes and thaw out kinda mushy, but i just use them in cooked sauces.

 
You dehydrate them, then rehydrate in hot water for 1/2 hour. Then blot and layer in

half pint or other smallish jar with chopped fresh herbs like parsley, rosemary, basil, marjoram, oregano, thyme. throw in some pressed garlic, hot pepper flakes. Pour oil over all. Refrigerate for several weeks and they are ready to use. they only keep a few months so watch for mold on top. Don't make more than you will use in a short time. You can use the flavored oil in salad dressings. Or just rub it on your face!

I usually dry lots in season and store them in the freezer and make this up as needed.
