I made this yesterday and it was really good. However, it is not what

I know as Arroz con Pollo or Chicken and Yellow Rice. At least not what I get here at our Cuban restaurants. I would say this is a really great Spanish Rice and I would recommend it but as a Spanish Rice. In fact I'm making some beef enchiladas tomorrow and having it as a side.

Have you tried this recipe I've posted from Fine Cooking? It has less tomato which I prefer, but dh

likes them both really well.
