Tokk Mum for fun at a pub...2 glasses of wine and she was

very happy to sop up some conch fritters I ordered. Back home again to cook for DH and she said she could do with a wee bite more so made (frozen) chicken and spinach ravioli with steamed asparagus and a sauce of beaten egg, cream and truffle oil with wee tomatoes, arugula from the garden and wonderful saucsis slices(and more wine) Yummay!!!
At the pub they had a crab race....Mum bet on 2 numbers...there were prizes for the first 3 and guess what...we were with 2 friends and they won 1st and 3rd. We didn't feature, but being at a winners table is always great fun.
We ordered a glass of wine each and found that it was 2 for the price of one! Such Fun!

 
Grilled Flank steak, marinated in cumin, garlic and fresh lemon juice

sliced thin, over caramelized sweet onions. Jasmine rice with mushrooms and lemon. A veggie combo of green and yellow squash, roma toms, roasted.

 
Rec: Italian Sausage and Tortellini Soup (with a couple changes)

Click on the link for over 150 reviews. This time I used hot Italian sausage, omitted the red wine, tomato sauce and tortellini, added a can of garbanzo beans and, and the end, some finely shredded cabbage. I guess you could say I tweaked it a bit, though it's a nice soup as written. ;o)

Italian Sausage and Tortellini Soup

1 pound sweet Italian sausage or chorizo sausage, casings removed
1 cup chopped onion
2 large garlic cloves, sliced
5 cups beef stock or canned broth
2 cups chopped tomatoes (about 3/4 pound)
1 8-ounce can tomato sauce
1 large zucchini, sliced
1 large carrot, thinly sliced
1 medium-sized green bell pepper, diced
1/2 cup dry red wine
2 tablespoons dried basil
2 tablespoons dried oregano

8 to 10 ounces purchased fresh cheese tortellini
Freshly grated Parmesan cheese

Sauté Italian sausage in heavy Dutch oven over medium-high heat until cooked through, crumbling with back of spoon, about 10 minutes. using slotted spoon, transfer sausage to large bowl. Pour off all but 1 tablespoon drippings from Dutch oven. Add onion and garlic to Dutch oven and sauté until translucent, about 5 minutes. Return sausage to Dutch oven. Add stock, tomatoes, tomato sauce, zucchini, carrot, bell pepper, wine, basil and oregano. Simmer until vegetables are tender, about 40 minutes. (Can be prepared 2 days ahead. Cover and refrigerate. Bring to simmer before continuing.)

Add tortellini to soup and cook until tender, about 8 minutes. Season soup to taste with salt and pepper. Ladle soup into bowls. Sprinkle with Parmesan and serve.

Serves 6.

We hada tikka masala fish dish and Ina Garten's......

baked chips....
Iused a recipe that was posted above for a chicken dish. I used the yogurt marinade for tilapia. It was wonderful.....and I made Ina Garten's baked chips to go with. Both were delish!

 
This is one of our favorites...I always cut back on the beef broth and it comes out

like a stew...your changes sound very good! Might try them next time!

 
I sawn that, Ang. I don't use anywhere near that amount...

I could see if they added it early in the cooking, to make beef more tender, but they don't mention it at all. Strange. And it's advertizing for a cookbook!

I just add about a Tbsp of cider vinegar, when I add the gravy, wine, etc. Permeated the beef a little, and gives it some zip, cutting the taste of the fat (I don't really like thick gravy).

 
My weekend menu.

I said I would list the items that I cooked for this weeks meals and here they are. I am sorry ahead of time since I don't recall where I got all of the recipes so I cannot credit the sites where they were posted or the authors. I do have the recipes if anyone is interested I can post them this week.

Stuffed peppers made with Orzo and Kalamata Olives. The pan exploded in the oven due to an imperfection in the glass. All of it had to be thrown out and my hubby to be never got a chance to taste the finished product but he sampled the filling and thought it was great. I will try again some other week.

Thai shrimp curry. This dish was spicy and full of flavor. I may cut down on the spice next time though.

Indian butter Chicken.(Post #498 MiainMD) This was his favorite of the bunch. He loved it served over rice and has told me not to lose this recipe or the wedding is off. Hee hee.

Cucumber Onion Raita for the butter chicken.

Gails 5 ingredient chicken. Another recipe that I cannot lose. I did add a bit of garlic since my HTB can't get enough. He plowed through a whole piece which is quite a bit for him and told me he wants this again in a week or two.

Sliced beef with hoisin sauce served over mixed greens.

Garlic wasabi green beans.
