I watched my mom reading Spice Island's cookbook so I picked out Sour Cream Potato Soup
and made it, and it was good. I was so scared and it was our featured entree. You would have thought I was cooking Thanksgiving dinner the way I slaved over this soup. It still is one of my favorites! Think I was in 3rd grade....
REC: Spice Island's Sour Cream Potato Soup
5 c h20
2 1/2 c diced potatoes
2 T beef stock base
1/2 t med grind black pepper
2 t Beau Monde seasoning
1 t ground cumin
1 t arrowroot
1 c sour cream
1 t chervil
Combine water potatoes & beef stock base ina 3 qt kettle. Simmer until potatoes are tender; mash but do not drain. Add pepper, Beau Monde & cumin; simmer 10 min. Blend arrowroot into sour cream & stir slowly into the soup. Heat till just to the boil. Sprinkle with the chervil & serve at once.
Serves 8
