Where should I eat on this road trip?

I'm driving to Atlanta (from Oklahoma) next month. I'm going to take several days to get there and want to find good eats along the way. I'll be going through Dallas, Shreveport, Jackson, and Birmingham. My drive home will be more direct as I will have less time - Chattanooga, Nashville, Memphis, Little Rock.

Do you have any recommendations for places to eat or visit in or near any of these cities?

 
OH yes - Jackson as in MS or TN? And you are coming to Nashville so if you want to meet up....

I'll pull some places and get them posted no later than tomorrow.

PS I've checked out both the MS Tamale spots and the Birmingham spots, and they are all GOOD!
