longevity of open Port
I can't speak about an open bottle of Kirsch and how long it will stay good, but would like to say that Port does not stay good for very long....after six days, it loses all its nuance. What starts out with a wide variety of aromas and flavors, after about 4 days starts becoming just stale and one-sided. I had to do a lot of tasting during the WSET Diploma Course, and once bought four different types of both Port and Sherry to taste over the course of a week - in order to be able to identify them blind during the exams. Well, over the week, the changes were quite apparent. You don't want to be cooking with an old tired Port. Half-bottles are an option. But also, if you have to buy a whole bottle, there are all kinds of sauces that can be made with what's left-over and then frozen and in reserve for when needed -- I do this always for Thanksgiving sauce, for example, to go with the meat.
