Whew....tired! Been making tons of candy!

Wouldn't it be great?

I'd just love to get together in a HUGE kitchen and bake and candy make up a storm with y'all!!!! YAY!

We could keep ye old espresso machine running and make till we drop! smileys/smile.gif

In the meanwhile, my girlfriend Lori has never made candy and I'm going to be teaching her how to do some in a week or so. I'm looking so forward to that!

My all-time fantasy is to go out of town, come home, and find that some kind elf has made:

4 batches of Chocolate Butter Cream Fudge
5 batches of caramel
4 batches of peanut brittle
3 batches of macadamia nut brittle
2 batches of English Toffee - pecan
2 batches of English Toffee - almond
2 batches of hard cinnamon candy

And of course, my fantasy includes owning a Viking kitchen.

Thanks for pointing me to the Hassle-Free Holiday Baking. I am commuting 4-5 hours per day so time

is at a premium. When I get home at 7:45PM I am too tired to do anything. If I do all my doughs ahead then I could just make and bake the cookies. I should revise my cookie list to replace the labor intensive ones but my family would kill me.

LOL Joe! Yeah, I'd love to have that kitchen, tooooo..... And I do...in my dreams...

My daughter's not that domestic but my son-in-law is a gourmet foodie and we get along great! He calls me Mom. (and I'm only 6 years older than he is! haha)

They will return on Monday (with Blue Mountain Coffee in tow) to one tin of caramel, a zip lock bag of toffee and a few rows of buttercream fudge. ha

My son-in-law has such a sweet tooth! He was picking at and scraping the spoons, pans and whatever drippings he could find before they left. Caramel is their favorite so that's why I left a tin there. They'll be surprised. But, after letting me dirty up their kitchen for over 24 hours I felt kind of bad to be so stingy. They'll get more, though....lol

That Viking stove top cooks like a dream! I'm not too fond of the oven, though. Guess I haven't gotten the hang of a convection yet.

Do you know if hot candy would break granite? I was tempted to pour the brittles out on the counters but I was scared to! lol Sure would set up quickly, though! I know they make marble candy pouring tops but I didn't know about granite. What do you think?

How's your shop in Laguna doing? What was the name of it again? You sent me the link once but I've lost it.

Hmm. I would never pour hot candy on someone else's stone countertops no matter what

the manufacturer said. No way.

In cooking for clients I've found a great deal of variation in the BTU's of Viking ranges. The lower-end ones look great but aren't very powerful. Sounds like your SIL got a good one.

The shop is on Balboa Island and it's Les Alpilles de Provence. We also have a store in LA now with the easier name "Maison Provence." (Neither is close enough to In 'N Out Burgers, to quote another discussion.)

Here's the site:

Good luck there! Close all the windows, crank the heater up for a couple hours smileys/smile.gif

Thanks for the link, Joe!

I'm looking forward to checking it out! And, it might be a good thing there's no In-N-Out near. Actually, I rarely eat burgers, especially fast food. In Missouri the only fast food burger I can stomach is BackYard Burger. They are wonderful.

As for the granite - I would never make a presumption to do such a thing, either. Even though the thought did cross my mind of how great it would be to have a candy stone. They give me full range of their house and I plan to keep it that way. smileys/smile.gif

And, yes - they have the top of the line Viking. Too bad my daughter isn't as thrilled with it as I am! smileys/smile.gif It cooks like a dream!

I'll PM you after I get a chance to check your site out. Thx again!
