Why is it so much harder to cook for one person? Any tips? I'm tossing a lot of food out and I hate

This is why I cook dinner for friends each Sunday. It's really hard to cook for 1

and it's also lonely, and sometimes I want to make a big *ss potroast but don't want to eat it forever, so I make it and have friends over or bring it to their house and we each split the leftovers and it's nice!

I also make little "tv dinners" for myself, a gallon ziplock filled with little quart bags of leftovers from a meal, main/side/veg etc. and it's great to pull that out and defrost and nuke later..

 
I have raved about this beef stew since Curious posted it! It's the

only beef stew I make now but I have never frozen it. We never get tired of it until it's gone. Most beef stews freeze great but I don't know how the carrots would hold up. I'm not fond of frozen carrots.

 
I completely get this. I try and make "new" full menus for the family on Fri. nights. We are 10 at a

meal and that satisfies my desire to go wild cooking! And I leave
some leftovers for me......

I don't mind carrots in stew that is frozen but potatoes really

don't do well.
Another use for leftover stew is a shepherd's or cottage pie.

 
Another thought on using the roast chicken

I often roast and stuff a large, organic chicken. The first night I eat some of the bony parts, leg, wing etc. The next day I might have a chicken sandwich and then slice the rest of the meat. I make my own freezer TV dinners with the chicken, stuffing, gravy and whatever vegetable I made that is left over. Label and date and freeze. Some nights when I get home late I just transfer the dinner to a small baking dish, pop it in my counter top oven, pour a glass of wine and watch the news. Voila, dinner. I do the same thing with Cathy's mothers' wonderful pork and sauerkraut dinner. If I have time I make stock with the chicken carcass and the usual additions, strain and freeze.

 
yes, it takes a good chunk of time. don't fret about not getting things done. it's really ok

one day you come out of the fog and want to tackle something and then you know you're making progress. It's a nesting/healing kind of world right now. hugs.
