Roasted Lemon Chicken, Great-Grandmother's Risotto, Spiced Nectarine Cake, Work-in-Progress Chili, >

Roasted Garlic Chicken
Basic Vinaigrette (have to nominate this since we have a variation of it nearly every night)
Warm Lentil Salad with Goat Cheese and Walnuts

To be honest, the other three in my top 10 are probably some version of roasted chicken! Perhaps I should branch out and cook more fish and meat in '08. smileys/wink.gif

Amanda, would you share your Green Chili Chicken Enchiladas, if it isn't a family secret? *g*

Erin, I'm the same way....absolutely love roast chicken...

made every which way, and love to have it far more often than my husband cares to...lol. Sometimes he'll come home and ask what's for dinner and if it just happens to be chicken I'm making I give him a wink and he laughs and says "chicken agaaaain???". A few days ago he asked if this year we could make fish an honorary chicken once in a while. Oh okay, I'll try.)

Great story, Pat! I feel like I roasted 100 chickens this year! smileys/surprise.gif

Gnocchi verde, pumpkin muffins, biscotti, lentil soup, turkey parts, butternut squash soup,

Kale soup with variations, oatmeal, frittata, pasta sauces (varied)

HA! Fish is my guarantee for dinner out. If I'm too tired to cook, I just put fish out to thaw...

DH absolutely HATES fish, although I manage to sneak it in once in awhile. I think I've used the same frozen package of fish for a year now... it's never stayed on the counter for more than 10 min. Maybe I'd better invest in another package just in case I ever really get to cook it.
