Does anyone have a homemade "protein bar" type recipe? I am not an early breakfast person. I have to leave the house before 6:30 a.m. I used to keep Builder's Bars in my desk drawer, but I have a condition that puts me at high risk for breast cancer. While natural soy is o.k. the protein isolate & processed soy is frowned upon due to estrogenic properties. Additionally, I'm allergic to peanuts, so no peanut butter. I tried these & they sounded promising but were vile, dry, sawdusty, flavorless. I used regular yogurt, real eggs & almond butter & whey protein powder in them

Ingredients:

1 cup dairy-free soy protein powder

2 cups quick-cooking oats

½ cup whole wheat flour

¼ cup wheat germ

2 t. baking powder

½ t. salt

2 cups chopped dried fruit, such as raisins, apricots, berries

1 cups plain, unsweetened soy yogurt

2/3 cup maple syrup

¼ cup apple juice

2/3 cups natural unsalted peanut butter, creamy or crunchy

1/4 cup Egg Replacer mixed with 1/2 cup hot water

Preparation:

1. Preheat the oven to 350 F. Lightly oil a 9” x 13” baking dish.

2. In a medium-sized mixing bowl, sift together the protein powder, oats, flour, wheat germ, baking powder and salt. Mix in the dried fruit until evenly distributed. Set aside.

3. In another mixing bowl, mix together the soy yogurt, maple syrup, apple juice, peanut butter and Egg Replacer mixture using an electric hand mixer until well combined. In 2-3 additions, add the dry ingredients to the wet, mixing until just combined spread into the prepared dish and bake for 35 minutes, or until golden brown and set. Allow to cool completely on a wire cooling rack before cutting into bars.

 
Most of these sound great but they are all carbs & no (or little) protein

I should add, I work 7 a.m. to 2:00 p.m. with no lunch break. I liked the Builders Bars because they have twenty grams of protein. If I just eat something sweet I will be ravenous all day.

More yogurt instead of the egg. Chocolate chips instead of fruit, but they are very close. The ones I made were like barely sweetened sawdust.

 
It really aggravated me to waste them. They were fairly expensive to make

With all the dried fruit in them. Do you think the fruit could have sucked all of the moisture out of the batter? It wasn't presoaked. I also thought it was weird that the ones I made had 2 tsp of baking powder instead of soda with the yogurt.
