Saturday's Satisfying Supper

At the last minute we invited Ian's elder sister over for supper last evening warning her it would be simple fare. Having company was an excuse to try a couple of new easy looking recipes.

1. Tried the Cherry Rosemary Spread posted yesterday; decided to divide the goat cheese into two parts and added cherries to one half and cranberries to the other. Very nice served on date & walnut fougasse.
2. Prepared a very quick shrimp dip by throwing a small handful of previously frozen salad shrimp, a little red onion, a tbsp of horseradish and enough low fat mayo to make it a dip.
3. Made "Sirloin" Bourguignon Burgers which were a great success.
4. Enjoyed a bottle of Louis Bernard Cote -du-Rhone-Village with the burgers. Heavenly.
5. Actually served a bought dessert; not my usual style. We had fresh pineapple rings with a side of butter tarts.
6. Clean up was a breeze. smileys/bigsmile.gif I was very satisfied the meal was a so good with amazingly little preparation.

 
I had my doubts about broiling but came across this recipe for Five Spoons of Creme

Brulee which uses a broiler, so I guess so. I was wondering if the ceramic or porcelain spoons would hold up to the intense broiler heat without cracking. I'll likely use a blow torch when I do them...we'll see.

is something I'm going to try this week too... but served on date and walnut fougasse = "simple fare"? What do you consider fancy? lol

 
My Sunday Six

1. I would appreciate it if someone could tell me how to sleep with a "moon boot" on. (I fell in the hallway and broke three toes, dislocated the fourth and broke two bones in my foot, my right one of course, and I no longer brake for animals sleeping in a dark hallway.)
(No sympathies necessary, I already threw myself a three-day pity party, all done with that now!)

2. I am thankful that I only have to sleep with a "moon boot" on.

3. I just had asparagus for breakfast from our garden, the first year we can harvest lightly. And it was delicious. Twelve-inch stalks that are tender from tip to end. Just steamed them lightly then tossed with butter, salt and pepper.

4. Spending a quiet Sunday morning planning out the gardens around canning and freezing for next winter. And watching all the bulbs, lilacs, and violets blooming.

5. Watching a No Reservations marathon uninterupted because my family is taking good care of me. smileys/smile.gif

6. Making homemade pizza dough in my KitchenAid and homemade pizza sauce on the stove for dinner tonight. Two pizzas; one pepperoni and homemade Italian turkey sausage, and the other one supreme-style with lots of veggies and a little pepperoni and Italian sausage. The family doesn't know it yet, but we are definitely on the move to more vegetarian meals.

 
The other courses were:

*Grilled Ahi & potato skewers on tomato couli
*Lamb stew w/ pappers
*Cherry Almond tart served w/ manchego, fresh cherries, & pears w/ fresh fig preserves

ONE OF OUR BEST DINNERS!

 
This sounds so good!

I love calamari. The butcher can order some for me, I may have to do that now. Did you use whole squid or the cutlets?

Those boots are not easy. dh had to wear one twice. Not pretty. So sorry that you are going through this.

We are also doing more vegetarian. Dh hasn't quite figured it out...Just easing into it.

Good luck with the Pizza. On my list of things to try to make....

 
Poor Dawn! I can't tell you how many times I've almost fallen over a sleeping cat.

Feel better soon!!! What do you do the rest of the day? No moon boot? You must be in some sort of cast?

 
I bought a box of frozen whole small squid, which I then had to clean (WELL worth the work)

I did have trouble finding them. Three pound box was about $7 plus. I changed the Spicy Tomato Vinaigrette: to use 1/4 tsp cayenne instead of 1/2 tsp. A good choice as you don't want to overpower the other flavor components.
I was prepared to use calamari steaks, crossed-hatch scored & cut into narrow strips but it wouldn't have been as tender as the rings. What ever you do DON'T overcook the rings. I did 2 minutes, not 3.

 
No, I am in

the moon boot all the time, except to shower. It is just so clumsy. It is like a concrete Frankenstein foot. I almost took out my other foot with it a couple nights ago. smileys/smile.gif

 
I have come to same conclusion. This is the hallway that leads up to the steps,

not down to the steps, or I would be completely traumetized. Not a person goes down the stairs at more than a snail's pace without me commenting to them to BE CAREFUL ON THE STAIRS! And that includes the dogs. smileys/smile.gif

I think my butcher can get both kinds frozen. I am definitely going to order some now. After I looked at your recipe I started looking at some others and I am really craving them now. I want to try my hand at this one dish I had at a restaurant in San Diego. They served Salt and Pepper Calamari on a bed of refried black beans with garlic aoli. It sounds odd, but it was delish. Thanks for your recommendations and recipe.
