Grilled pesto zucchini planks with fresh mozzarella beards
Cut zucchinis lengthwise into 1/4"+ thick planks, slicing a piece of skin from the outside pieces to expose the flesh on both sides, slather with pesto and toss onto the grill for several minutes. Top hot slices with pulled pieces of fresh mozzarella, a squirt of lemon juice and serve.
