Baby Shower Challenge!

Does the avocado get smooshed when you mix it all together?

I had some tortilla soup a few weeks ago, and I discovered I did not like the avocado chunks, in the soup, at all. So now I am a little gun-shy about avocado in things other than on top of salads or in guacamole.

No, just the CM. I wanted to get one of the beautiful baskets and just fill it up. drats to the

airlines for all those extra baggage fees---kept me from spending. Wait, maybe that was a good thing!!

 
Same here, it remains in chunks, but it's important not too choose avocados that are too 'squishy'.

A slightly firmer avocado (but not hard -- hard ones aren't quite ripe) will cut nicely and hold its shape. A tasty corn salad indeed.

 
Others could weigh in better (portions is not my strength), but I'd double it & expect no leftovers.

 
I make one similar to this that doesn't have the avocado and it says 4-6 servings for

5 ears of corn. I'd think with the avocado and if the ears of corn are large, you'd get at least 6 and probably closer to 8 with other sides.

Edited to say it's been my experience that people take smaller portions when given a lot of choices. Have you found that to be the case?
Also, I usually get more corn from an ear than what is usually stated in a recipe.
