Yeah, I hardly ever go to them, but when I do I get interesting things. The taco "buffet"(?) is
kind of a fast-food place, but I don't think it's a national chain. You order a plate of tacos (or just a rice bowl), and go down the line, adding toppings... meat or grilled vegetables, choice of beans - black or pinto, fresh vegetables (tomatoes, peppers, lettuce, diced potatoes!, cucumbers, etc.), then top with queso, salsa, sour cream, guacamole, bacon, green onions, shredded cheese, chopped olives, corn, and cilantro.
The price is determined by whether you choose grilled vegetables, chicken, ground beef, or shredded pork at the beginning, then everything else comes with it.
Here, they serve you, but it could just as easily be self-serve, and then charge by weight. I think it would be unique and popular in the Midwest at your place.
